Sunshine Carrots

I've been trying to get the kids to do all the dishes on their own this week, which has inevitably meant that my kitchen is far less appealing to cook in.  But, I did pull off one of those really yummy, satisfying dinners the other night, with an herbed rice pilaf, some broccoli, sunshine carrots, and fish baked in a tangy, creamy sauce.  Really, really good food.

Here's how to make the sunshine sauce for the carrots:  combine 2 T. sugar, 2 tsp. cornstarch, 1/2 tsp. ginger, 1/2 tsp. salt, and 1/2 c. orange juice in a saucepan.  Cook and stir until thick and bubbly, stir in some butter (2-3 T.) and add to cooked carrots.  Makes a large batch, enough to well-coat about 10 medium carrots worth.
