Pesto-tuna with cucumber slices on English muffins, and some broccoli/cauliflower from a frozen mix.  (Using up random stuff can be really enjoyable.)
I had thawed some pesto a couple of weeks ago and didn't use it all, so last night when I was about to make our tuna sandwiches for dinner it occurred to me to see if pesto could go with tuna.  I looked online and found plenty of people who put them together, so that's what we had for dinner.  I've also been known to dice up apples in my tuna sandwiches -- it seems like chicken salad often gets all the attention, but there are plenty of fun tuna variations too.
