Baked potatoes with all the fixings.  When I cook chili, I always plan to make a big batch and then serve baked potatoes later in the week with the extra.  Easy enough to throw a few potatoes in the oven or crock pot and add some cheese and broccoli at the table along with the chili.

And two nights ago, spaghetti (actually angel hair) with a hurried garden salad.
