Summer Feasting, Some New, Some Old

In other news, we're moving on from zucchini to tomatoes. Not because we have more tomatoes than zucchini as of yet, but we're moving on anyway. Colorful and flavorful has been the name of the game this week. I love summer food!

Cuban black beans ~~ layered rice, garlicky seasoned black beans, shredded cheese and lettuce, chopped tomatoes, salsa, sour cream

Greek pizza ~~ pizza dough baked with homemade hummus, feta cheese, chicken, sliced olives and roasted red peppers, and with fresh cold garden cucumber on the side

Fish tacos ~~ fish marinated in oil, lime juice, cilantro, chili powder, and diced jalapeno, then grilled and topped with pureed tomato salsa, lime-cilantro crema, and cabbage in a corn tortilla

Bruschetta ~~ nice real Tuscan olive oil on homemade whole wheat sourdough baguettes, with garlic, basil and sweet, ripe homegrown tomatoes

Sesame noodles ~~ Thai-inspired tangy peanut butter and sesame oil sauce, on angel hair with shredded carrots and sliced cucumbers

Swiss chard ~~ can anything be simpler or more delicious? Fresh-picked and tender, with a few splashes of lemon juice and bacon bits
