Pumpkin Pie
Monday night, we had a Mexican casserole-thing, where I chopped up a bunch of zucchini and tomatoes and put them in the oven with some enchilada sauce, corn tortillas, and cheese. It was more like a side dish, but so yummy, and made a perfect meal when paired with the best pumpkin pie I've ever eaten. And I'm not even a huge pumpkin pie fan usually. We've tried to use home-cooked pumpkin in pies before, but it never worked very well. This year (likely thanks to the immersion blender we used on the filling before pouring it into the crusts), it was amazing. We only had two tiny little pie pumpkins mature in our garden before the borers and squash-ladybugs killed the vine, and we used them up on these two pies, but it was heavenly. We ate one entire pie after Family Home Evening, and the other entire pie for breakfast the next morning. Mmmm.
